Ingredients:

  • 500 g potatoes
  • 4 eggs
  • 20 g potato starch
  • 20 g butter
  • Salt
  • Pepper
  • Muskat
  • 1 tbsp flour (possibly more)
  • 300 g breadcrumbs
  • Fat for frying

Preparation:

Ingredients

  • 500 g potatoes
Boil potatoes with peel in salted water. Then peel and press through a potato press. Allow the potato mixture to cool.

  • 20 g potato starch
  • 20 g butter
  • Salt
  • Pepper
  • Muskat
  • 1 tbsp flour (possibly more)
Separate eggs. 2 Mix egg yolks with starch, butter, salt, pepper, and nutmeg under the potato mixture. Depending on the consistency of the mixture, mix 1-2 tbsp flour.

  • 300 g breadcrumbs
Form small croquettes out of the dough. First form a small dumpling, then roll and slightly press the ends. Roll croquettes first into egg whites and then in breadcrumbs. For a thicker panade, repeat the process if necessary.

Heat the fat to 170 degrees and bake the breaded croquettes in hot fat floating golden yellow.
