Chive-Mustard Potato Salad With Sausage Skewers |

Ingredients :
- 400 gm cherry tomatoes, halved
- 1/2 red onion, finely sliced
- 1 cos lettuce
- 750 gm canned new potatoes, drained and h; halved if large
- 1 tablespoon seeded mustard
- 300 ml light sour cream
- 1 bunch chopped chives
- 1 lemon juice
- 1 salt
- 1 cracked pepper
- 6 large gourmet sausages
Preparation :
Preheat grill or barbecue. Combine tomatoes, onion, and lettuce in a shallow bowl. Add potatoes. Combine mustard, sour cream, and chives, and season to taste with lemon juice, salt, and pepper. Bring sausages to boil in a pan of water. Drain immediately and thread onto soaked wooden skewers. Cut slits across each. Grill or barbecue for five minutes, browning on all sides. Toss the chive dressing into the potato salad. serve with sausage skewers.
